This morning I was too lazy to upload my own picture, so I borrowed a picture from over here. Gotta love google images!
But the picture does not even come close to the tastiness of this dish! Oh my… so good! Here’s the recipe so you can make it, try it, and love it! I love recipes that I can read and understand all the ingredients. For real! Sometimes I read recipes online and think “what in the world is that?!”
This recipe will warm your belly on these cold, frigid nights for sure!
Corn Chowder
2 cups water
2-3 cups diced/peeled potatoes
1/2 cup sliced carrots
1/2 cup sliced celery
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter or margarine
1/4 cup all purpose flour
2 cups milk
3 cups (12 ounces) shredded cheddar cheese
2 cans cream-style corn (14-3/4 each)
3/4 cup of diced/cubed ham.
Instructions
Place water in a 2 quart sauce pan. Heat until boiling.
Add potatoes, carrots, celery, onion, salt and pepper. Cook, uncovered, on high for 8-10 minutes or until vegetables are crisp and tender; set aside (do not drain).
Meanwhile, in a 3 quart sauce pan, heat butter until melted. Stir in flour until smooth. Gradually stir in milk. Cook, uncovered, for 6-7 minutes or until thickened, stirring every 2 minutes.
Add the cheese. Stir for about 1 to 2 minutes or until cheese is melted. Stir in the corn, ham, and reserved vegetables. Cook for another 2-3 minutes or until heated through.
Yield: 10 servings (2 1/2 quarts). Enjoy and share the goodness by liking it below:
