Eclair Cake
An easy peasy dessert your kids could make! This is a great one to whip up when you are in a hurry. It is (of course) super yummy too!
Ingredients
2 pkgs french vanilla instant pudding
1 box of graham crackers
1 8 oz. cool whip
1 can fudge frosting
Directions
Prepare pudding as directed and mix in cool whip.
Line 9×13 inch pan with graham crackers to cover.
Pour 1/2 of the pudding mixture over crackers.
Make another layer of crackers.
Pour remaing pudding over top.
Make another layer of crackers.
Frost the top with the fudge frosting.

Kids love it, don’t they? I’ve been making a similar cake for over 30 years. It’s a great recipe. I use a different icing for it, though. It’s sticky just like an eclair and yummy. I’m going to have to make it now!

That looks awesome! So simple! I’ve made similar with boxed chocolate chip cookies, they get all gooey from the cream, yum!
