4 boneless skinless chicken breast halves
1 (1 1/4 ounce) package taco seasoning mix
1 cup salsa
2 tablespoons cornstarch
3 tablespoons water
1/4 cup sour cream
Directions:
Spray liner of crock pot with spray
Add the chicken
Sprinkle w/taco seasoning mix and top w/salsa
Cook on low for 6 to 8 hours
When you are ready to serve, remove chicken from crock pot and place on meat platter. Shred chicken with two forks.
Mix together 3 tablespoons water and 2 tablespoons cornstarch. Add to salsa mixture in crock pot and stir well. Turn crock pot to high and sauce should begin to thicken in 5 minutes. Stir in sour cream and replace chicken. Serve on tortillas or over rice.
Vegetable option: Try to throw some black beans or corn in to sneak in another veggie or two!

Absolutely my family would enjoy this!! I will be trying it and I love that it is done in the crock pot!! With being so busy with three kiddos, the crock pot is my best friend!!!!

Wanted to let everyone know I made this delightful dish today and we really enjoyed it. I added black beans and we ate the ‘stuff’ wrapped in a whole wheat tortilla and topped it off with sour cream. Definitely an easy recipe I will make again. Try it – you’ll like it.
